Egg Bhurji is a popular and easy-to-make Indian dish made with scrambled eggs, onions, tomatoes and few aromatic spices. This is not only nutritious but also a delicious dish and is perfect for breakfast, lunch or dinner.
To make Egg Bhurji, first beat the egg in a bowl with spices. Fry the chopped onion till it becomes translucent. Add chopped tomatoes, green chillies, turmeric, cumin and coriander powder. Mix well and cook for a few minutes till tomatoes becomes soft.
Add beaten eggs and mix well. Cook the egg stirring continuously till it is completely cooked and scrambled. Garnished with chopped coriander and serve hot. Anda Bhurji or Egg Bhurji is a versatile dish that you can cook according to your taste.

Egg Bhurji | Anda Bhurji Ingredients
Ingredients
Eggs | 3 | Butter Or Oil | 2 Tablespoon |
Milk (Optional) | 2 - 3 TableSpoon | Green Chilli Finely Chopped | 2 |
Onion Chopped Chop | 1 Large | Garam Masala (Spice) | 1 Teaspoon |
Chaat Masala (Spice) | 1/2 Teaspoon | Tomato finely chopped (Optional) | 1 Small |
Salt | 1/2 Teaspoon or Acc. to Taste | Red Chilli Powder | 1/2 Teaspoon or Acc. to Taste |
Green Coriander Leaves | To Garnish |
Direction To Make
- Take a big bowl and break the eggs in it.
- Mix milk, salt, red chilli powder and beat the mixture using beater until it is smooth and fluffy and set it aside.
- Take a frying pan and heat butter or oil in the pan over medium heat.
- Add chopped onions, tomatoes and green chillies to the pan and fry till it becomes light brown and gives you a nice aroma.
- Add the egg spice mixture into the pan and fry the mixture on a medium flame stirring constantly so that the egg mixture breaks into small chunks and prevents burning.
- when almost cook add garam masaala and chaat masaala while stirring and fry for approx 2 minute.
- Egg Bhurji is ready to serve.
- Serve it garnished with coriander leaves.
Notes
Milk helps make small chunks and adds more taste.
